Course Description: This course teaches the methods baking a cake and step-by-step decorating techniques. Students learn to make and color icings; create icing drop flowers, rosettes, shells, pompom flowers, leaves, shaggy mums and roses; decorate cookies and cupcakes.
Student Learning Outcomes: Students will be able to:
- Prepare and evaluate the quality of a variety of cakes; properly level cakes for stacking.
- Prepare buttercream icing, decorator icing and ganache for covering cakes for decorating event and celebration cakes.
- Demonstrate and evaluate basic icing and decorating techniques.
- Prepare and evaluate the quality of royal icing and prepared display pieces.
- Create a variety of icing flowers including drop and roses.
