Course Description:
The Meat Cutting and Sanitation block will introduce students to safety and sanitation procedures used in a shop setting that should be observed to keep themselves and the consumer safe.

Student Learning Outcomes:
  • Students will be given an overview of procedures to take should an emergency occur in their work area.  
  • Students will examine federal guidelines that govern the meat packing industry
  • Students will demonstrate safety procedures used in a meat science laboratory
  • Students will demonstrate the appropriate methods for sharpening knives used in the laboratory
  • Students will recommend various pieces of equipment for the appropriate job in the laboratory
