Course Description:
This block of instruction includes an introduction to USDA rules and guidelines established to protect producers and consumers in the meat industry. Students will understand these to apply that critical knowledge in the workplace.

Student Learning Outcomes:
  • Students will examine and understand the regulations governing boxed beef
  • Students will examine and understand the regulations governing “ready to eat” meat products
  • Students will understand and demonstrate the requirements for condemnation of meat products.
