Course Description: Review the various cooking methods for the different groups of food.
Student Learning Outcomes:
- Identify the different cooking methods for:
- Meats and Poultry
- Vegetables
- Dairy and eggs.
- Discuss different cooking techniques such as dry, moist, or combination cooking
- Examine effective use of the techniques of Blanching, Baking, Grilling, Frying, Poaching, Boiling and Broiling.
