Course Description: A study of beverage service in the hospitality industry including spirits, wines, beers and non-alcoholic beverages. Topics include purchasing, resource control, legislation, marketing, physical plant requirements, staffing, service and the selection of wines to enhance foods.
Student Learning Outcomes: Students will be able to:
- Identify and correctly describe the principles associated with beverage service.
- Identify the controls utilized for accountability functions in beverage service.
- Describe and explain the purchasing functions in beverage service.
- Summarize the importance of liquor laws and regulations as they pertain to the dispensing of alcoholic beverages.
- Demonstrate the procedural steps in the construction of mixed beverages with specific time limits.
- Explain the importance of serving alcohol responsibly.
