MPT 2050 - Fabrication of Wholesale Cuts

Course Description: The keystone course of the 2nd trimester involves students taking whole animal carcasses from the slaughter floor setting and breaking them into wholesale cuts. This will include cutting, handling, sealing, transporting, and storing the cuts for optimal shelf life.
Student Learning Outcomes:
- Students will understand and demonstrate the appropriate procedures for preparing wholesale cuts of meat from slaughtered whole animals.
- Students will demonstrate proper handling and packaging of wholesale cuts of meat in preparation for the customer.
- Students will demonstrate appropriate procedures for waste disposal and sanitation after preparation and cutting procedures.
